Yellow Cheddar (1 year aged) (4oz): Gibbsville Cheese Co., Inc.-WI; Pasteurized cow’s milk; aged-12 months. Slightly tangy; very earthy and sweet; moderately sharp with a terrific finish. May we suggest a beer or fruity red wines.
Pepato with Black Peppercorns (4oz): BelGioioso-WI; RAW cow’s milk; aged 12months.Robust; slightly sharp with a definite bite added by the peppercorns; classic flavor profile of a Romano. May we suggest a hard cider, tannic red wines.
Three Pepper Marble Cheddar (4oz): Shullsburg Creamery; Shullsburg-WI; Pasteurized cow’s milk; aged 2 months. A pleasant balance of sweet and “warm” with mellow tones; the taste of the jalapeno, chipotle, and habanero peppers are first to appear, followed by the sweet dairy tones. Finally, the warmth of the chili blankets your tastebuds; a huge mouth-filling finish without the usual cheddar sting or the customary burn of a chili pepper. May we suggest: Fruity red wines; beers; champagne and other sparklers.
Crackers (2-2 oz bags): Partners Gourmet Crackers-WA. Thin, crispy, flavorful crackers complement everything from traditional cheeses and soups to the most exotic dips and spread. These smaller cut crackers are great for party appetizers, snack, or part of a full meal.
