Monterey Jack

Almond Crostinis

 

Ingredients

  • 1 French Baguette cut into 36 slices

  • 6 oz Monterey Jack

  • 6 oz Pepper Jack

  • 1/2 cup mayonnaise

  • 1/2 cup sliced almonds

  • 1 green onion

  • A dash of salt

  • A dash of garlic powder

    OPTIONAL

  • 6 bacon strips, cooked and crumbled

  • Additional almonds to garnish

 

Recipe

  1. Set your oven to 400 degrees. Lightly baste your bread slices with olive oil and place them on an ungreased baking sheet. Bake until lightly browned, about 8-9 minutes.

  2. Chop your green onion and grate your Monterey Jack. We used two different kinds for a pinch of extra flavor, but you can use 12oz of plain Monterey Jack if you want to keep it simple.

  3. While your bread is toasting in the oven, combine the Monterey Jack, mayonnaise, sliced almonds, chopped green onion, crumbled bacon, salt and garlic powder in a large bowl.

  4. Remove your toasted bread from the oven and scoop a tablespoon of the mixture onto each slice. Put the now topped toasted bread back in the oven for about 7-8 minutes, or until the cheese is melted.

  5. Remove from the oven, top with additional almond slivers or serve them as is!
