Loaded Nachos

 

Ingredients

  • 1 Bag of Tortilla Chips

  • 1 16oz can of refried beans

  • 1 large stalk of green onion, sliced

  • 1 Roma tomato, chopped

  • About 15 black olives, sliced or chopped

  • 2 tsp cumin

  • 2 tbsp water

  • (Optional) 1 jalapeño, finely chopped

 

Directions

  1. Chop your green onion, tomato, black olives; and if desired, jalapeño. Grate the Medium Cheddar.

  2. Mix your can of beans with cumin and water. Microwave till warmed, about 30-45 seconds depending on your microwave.

  3. Evenly spread tortilla chips on plate. Make a few layers of chips so as to create a solid base for toppings.

  4. Scoop dollops of refried beans onto your chip base. Spread evenly across the top.

  5. Take a large handful of shredded Medium Cheddar and sprinkle on top. If you are a Cheese Lover, you may opt for a second handful.

  6. Place the plate in the microwave and cook until cheese is melted, but not crispy or burnt - about 1-2 minutes depending on your microwave.

  7. Remove platter from the microwave and top with your chopped green onion, tomato, black olives, and if you wanted some heat, jalapeño pepper.

  8. Enjoy with family and friends!
