Goata Blanc (4oz): Great American Cheese Private Collection; Wisconsin; Pasteurized goat’s milk; aged 6 months. Intense and concentrated; meaty. May we suggest Port, Madeira, Sherry, and fruity, full bodied red wines; malty beers.
Cranberry Jalapeno Jack (4oz): Renard’s Cheese-WI; Pasteurized Holstein cow’s milk; aged 3 months. Sweet; earthy; spicy hot; long warm finish with enough butterfat to soften the sting of the peppers; sweetness and heat make a terrific combination. May we suggest a malty beers, sweet wines.
Cracked Black Peppercorn Cheddar (4oz): Renard’s Cheese-WI; Pasteurized Holstein cow’s milk; aged 2 months. Sweet, tangy, pungent, and savory with an abundance of young cheddar notes; punctuated by the heat and aromatics of the peppercorns; big finish. May we suggest red wines, hoppy beers.
Cowda (4oz): Great American Cheese Private Collection; Wisconsin; Pasteurized cow’s milk; aged 12 months. Parmesan-like tones; intense and concentrated; sweet caramel notes; creamy on the palate; impressive acid backbone; lots of persistence in a long, complex finish. May we suggest Port, Madeira, Sherry, and other fruity and full-bodied reds; Hirter Morchl Dark Lager.
